Enjoy freshly brewed doburoku brewed on site in a brewery-pub style
Heiwa Shuzo, a Wakayama Prefecture company known for its sake Kido, opened a brewery pub with a doburoku brewery in June 2022. With its interior decorated with Wakayama cedar, fermentation-inspired lighting, and background music sampling the waves of Wakayama Bay and the murmuring of the river, visitors can enjoy fresh doburoku, sake, and craft beer while experiencing the local climate through all five senses.
The brewer himself stands at the counter and regularly brews original flavors of doburoku, such as basil and azuki (red bean), to add to the menu. The brewer receives direct feedback from conversations over the counter, which also serves as inspiration for new flavors and styles. In addition to snacks, there is a full lineup of food items to pair with the drinks, such as “doburoku curry” and “Marutaya’s Wakayama ramen.
Nihonbashi flourished in the old days as a landing place for boats in Edo (old Tokyo), where sake was brought from the Kansai region. In Nihonbashi Kabutocho, the town of the first sake brewing, doburoku, the origin of sake, is being newly introduced.
